As many different recipes there are of the popular Frankfurt "Grie Sooß" , there are also many ways to combine this specialty with other delicacies. Trout with Green Sauce is just one of many options, but definitely one of the tastiest.
- 4 trout
- 0.5 liters water
.- 0.5 liters Frankfurt Äppelwoi
- 1/8 liter wine vinegar
- 1 carrot
- 1 onion
- 1 leek
- 3 celery leaves
- and about 1 teaspoon each of salt and sugar
For the marinade: chop the onion, parsley (about one parsley root), carrot and leek and add it to the mixture of water, Äppelwoi and wine vinegar along with the celery leaves and about six peppercorns. Let it boil for about 15 minutes and then strain. Catch the liquid again with a pot and boil the whole thing again. Place the trout in this marinade and leave to marinate for about 20 minutes. Serve the finished trout best with jacket potatoes and fresh "Grie Sooß", your palate will thank you!
