Michelin-starred chef André Großfeld, who has been running the renowned Villa Merton restaurant in Frankfurt since January 2015, has once again taken over culinary supervision at Varieté DA CAPO this year.
"Mr. Jungeli and his team manage to create magical moments for the audience, to awaken childhood memories and that is exactly what I try to do every day in my restaurant. That's why I'm delighted and excited to be part of this fascinating ensemble and to contribute my share to an unforgettable experience," says the Michelin-starred chef.
The parallels between the worlds of the ring and the kitchen are obvious to Großfeld: "You can't do it without passion, concentration and a high degree of identification with your own job." This is the only way to inspire spectators and guests alike time and time again. The Varieté wears this season the motto "WOW"- The Comedy Flash Varieté.
"WOW"- an expression also the 38-year-old often hears when he walks through the rooms of his restaurant after a long evening in the kitchen and asks the guests how you liked the evening.André Großfeld has cooked his Michelin star in the very first year of his independence: with perseverance, love and the courage to open his restaurant "GROSSFELD- Gastraum der Sinne" in a village in the Wetterau. "The mentality regarding food and enjoyment has changed positively in many people in recent years, quality prevails in the long run. You can see and feel that here in Varieté."
In the arrangement of his dishes, the focus is on the essentials. "I don't need eight components on the plate to cook a dish to the highest standard. The biggest compliment for me is when guests say at the end of an evening it reminded them a little of the taste of grandma's kitchen. That's when I know I've done everything right."
