The black Périgord truffles from France are, along with the white truffles from Italy, among the highest quality and therefore most expensive truffle varieties in the world. Real truffles are extremely rare. Harvest quantities have fallen drastically in recent years. While up to 1,000 tons used to be harvested in France, today only 30 to 50 tons are harvested.
The few that are still around are mostly sold under the table. In the market instead are truffles from China. They look confusingly similar to Périgord truffles, but in taste they are as far apart as champagne and mineral water. When purchased, the China truffles cost only a fraction: if for Périgord truffles up to 2,000 € /kg are paid, a kilo of the flavorful China tubers costs only about 80-140 €.
