Frankfurt halibut

Even a tasty halibut fillet can be refined with a little delicious apple cider! Just try this variant from the Frankfurt area, for which you need the following ingredients:

Ingredients:

- 1 large halibut fillet

- 2 onions

- 1 cup sweet cream

- juice of one lemon

- 1/2 bunch parsley<

- Sugar

- Salt

- Pepper

- 0.5-1 l cider (depending on the size of the fish)

Preparation:

First you need to cut the onions into rings, and then put them in a casserole dish with the parsley in about half (depending on how much you use. You will need about 1/4 l for the sauce later) of the cider briefly boil. Now turn to the fish, which needs to be washed and then spritzed with the lemon juice. Leave the whole thing to soak in for about 15 - 20 minutes, then season a little with salt and pepper to your own taste. Now place the seasoned fish in the casserole with the onions and parsley and allow the halibut to poach for about 15 minutes on low heat.

Then remove the fish from the casserole again and keep it warm. You will need to drain the broth in the casserole into a separate bowl or pot. Now bring the remaining cider (about 1/4 l) with a little sugar in a pot to a boil and then stir in the cream. Now add a little of the caught fish stock and let the whole thing boil down well until you get a thick sauce (if need be, you will have to bind it with an egg yolk!). Pour over the fish to serve! Enjoy!
