Frankfurter potato soup

The Frankfurters are a very special people. So it's no wonder that they also like to prepare their food in a very special way. And so the Frankfurt gourmet is of course not satisfied with a simply prepared potato soup. It has to be a real Frankfurt potato soup. For this you need the following ingredients:

Ingredients

- 150 grams of dried meat

- 1-2 onions

- 2 tablespoons lard

- 2 leeks

- 1 carrot

- 1 lovage leaf

- 1/2 teaspoon marjoram

- 4-5 juniper berries (crushed)

- 1.5 quarts clear meat stock

- 1/8 litre cream

- 1 kg floury potatoes

- Croutons

- Salt

- Pepper

- And, depending on your preference, beef sausage, bratwurst or frankfurter

Preparation:

First you need to prepare the vegetables by dicing them after washing them. And while you're on the subject of dicing, now do the same with the jerky, which you then fry in the lard. The lard gives the meat an extra seasoning, but you can of course also use oil or margarine for browning.

Now you need to peel the potatoes and cut them into small slices. When the meat is browned, add the vegetables and potatoes and braise the whole thing briefly. Now season with salt and pepper and then deglaze with the meat stock. Boil the whole thing well until the vegetables are soft and the potato slices fall apart. Now refine the soup with the cream and then put in the chosen sausage. Now let the whole thing continue to heat up on a low flame. The soup is then served with fine croutons and the perfect potato soup pleasure is now nothing more in the way!
