Hessian lamb chops with onion puree

The Hessian does not like to cook without onions at all. Combined with the ingenuity of Hessian cooking, this fondness makes an excellent basis for all sorts of delicious dishes. For one of these dishes, you will need the following ingredients:

Ingredients

- 8 lamb chops

.- 50 g fat or lard

- Salt

- Pepper

- For the onion puree:

- 200g onions

- 30g raw ham (diced)

- 1Tbsp butter

- 6-8 peppercorns

- 20g flour

- 1/2 cup meat stock

- 1/2 cup sweet cream

- Salt

- Pepper

Preparation:

First comes the easiest part of the preparation: the lamb chops must be rubbed with salt and pepper and then sautéed in the fat or lard.

Now you need to get to work on the onion puree: First, you will need to cut the onions into rings - probably while in heavy tears - and gently simmer them in the butter along with the peppercorns and diced ham. When the onions have reached a soft consistency, add the flour over them and toast the whole thing well now. Then stir in the broth and cream and let the whole thing boil down well. Press the mixture through a sieve and season a little with salt and pepper. If necessary, you can now also fold in another tablespoon of butter.

Now place the lamb chops side by side in an ovenproof dish and spread the onion puree over them. The whole thing is now baked in the preheated oven at about 180 degrees until the onion puree has acquired a golden brown color. And this spicy delicacy is ready to serve! Enjoy it!
