Spiked Pike

To prepare this delicious fish dish, you will need:

Ingredients:

- 1 kg pike

- 100 g bacon

- 100 g butter

- 250 ml sour cream

- 1 tbsp vinegar

- Lemon juice (1/2 lemon)

- Salt

- Pepper

- 1/2 bunch dill

Preparation:

First, if you haven't already done so at the store, you will need to gut, scale, and wash the pike. After patting the fish dry, you will need to make an incision 3 inches apart on the left and right sides of each back bone with a knife. Now cut the bacon into sticks and lard the pike with them.

Now you need to rub the pike well with salt and pepper before tying it with kitchen twine at the head and tail, creating a kind of ring. Now let the whole thing cook in a pan in the melted butter on low for about 25 - 30 minutes. So that the fish does not become too dry, you should regularly drizzle it with melted butter. After this cooking time, add the sour cream and let the fish cook for another 10 minutes. Then remove the pike from the pan and keep it warm while you season the sauce with the vinegar and lemon juice and then refine it with the finely chopped dill. To serve, pour the sauce over the pike. Boiled potatoes taste especially delicious with it! Try it out!
