Vegetable omelette Frankfurt style

- 20 grams of butter

- 3 eggs

- 2 carrots

- 2 leeks

First comes the tiresome task of washing, cleaning and chopping the vegetables. Once that's done, saute the chopped carrots, tomatoes, bell pepper, and green onions in the olive oil and season to your own taste with salt and pepper. Be sure to saute the vegetables just until they are soft but still have a crunchy bite.

Now it's time to make the batter. To do this, scramble the eggs in a bowl with salt and pepper. Then stir in the finely chopped herbs. And now you need some skill: Heat the butter in a pan and, as soon as it has melted, add the seasoned egg mixture to the pan. Now you have to wait until the egg has set. Then take the previously prepared filling and put some on one half of the egg mixture. Sprinkle a little chopped chives on top and spread a little sour cream on top. Now carefully fold the other half of the egg mixture over it and your Frankfurt vegetable omelette is ready. If you don't serve the omelette immediately, but prepare more vegetable omelettes first, keep the finished omelettes warm (e.g. in the oven) until you serve them. Bon appetite!
