Cabbage Patch

Another culinary delicacy from the Frankfurt area is the Kraut-Sputel, which gets a particularly tasty aroma from the strong taste of the Kasseler. For the preparation you need:

Ingredients

- 250 g flour

- 25 g yeast

.- 125 ml warm milk

- 2 tsp sugar

- Salt

- 50 g butter

- 1 egg

- 1 onion

- 40 g clarified butter or lard

- 2 juniper berries

- 500 g sauerkraut

- 125 ml clear meat stock or vegetable stock

- 4-5 cured pork chops

Preparation:

First, put the flour in a bowl and press a well in the center of the pile of flour to crumble the yeast into. Now first add about 2 tbsp of the warm milk together with 1 tsp of sugar, mix it a little and let it sit covered in a warm place for about 15 minutes. Then add the rest of the milk with a little salt, the butter and the egg and knead the whole thing into a dough, which you then have to let rise again for 30 minutes.

Use the time to cut the onions into small cubes, which you then sauté in the pork or clarified butter in a fireproof dish. Now add the sauerkraut with the juniper berries, the rest of the sugar, a little salt and the meat or vegetable stock and cook for about 10 minutes. Then take the cured pork chops and place them upright in the cabbage. Form four dumplings from the now risen dough and place them between the chops. Cover and bake in a preheated oven at 180 degrees (convection oven 160 degrees) for about 50 minutes. And the delicious Kraut-Sputel is ready to serve!
