Cherry Melon

The Kirschenmichel is quick to prepare and extremely delicious - so it's no wonder that this fruit casserole is so popular even beyond the borders of Hesse. For the preparation you need:

Ingredients

- 5 Weckbrötchen (optionally also 250 grams of white bread)

- 100 grams of butter

- 375 ml of milk

- 4 eggs

- 125 grams of sugar

- Grated zest of one unsprayed lemon

- Cinnamon

- 1 Kg pitted sour cherries (dark sweet cherries can also be used)

- 100 grams ground almonds

Preparation:

First, cut the rolls (or white bread) into thin slices, then toast them in about 30 grams of the butter melted in a pan. Pour the milk over it and let it soak for a while. Separate the eggs so that you have four yolks and four whites. Then take the yolks and beat them together with the rest of the butter, the lemon zest and a little cinnamon until foamy. Now gradually mix in the bun mixture.

Now take the egg whites and beat them until stiff. Then take the washed and pitted cherries and mix them with the egg whites. Now slowly fold the whole thing into the batter. Now take a baking dish, which you grease and sprinkle with almonds. Pour the dough into the dish and bake in a preheated oven at 180 degrees for about 50 minutes! And already the delicious cherry pudding is ready!
