Hearty and strong tasting, this delicacy from Frankfurt requires a little time and the following ingredients:
- 4 slices of belly meat
- 2 tbsp breadcrumbs
- 1 tbsp lard
- For the marinade:
- 2 onions
- 1/2 clove garlic<x>.N</x>
- 1/2 cup cooking oil
- 1 tbsp white wine vinegar
- Mixed herbs (about 2 handfuls), ex.E.g. parsley, sorrel, chervil, tarragon
First you need to prepare the herb-oil marinade. To do this, cut the onions and garlic into very small cubes and sweat them in the heated oil. The whole thing is then deglazed with the vinegar, cooked through and seasoned with salt, pepper, a small pinch of sugar and a not much bigger pinch of paprika powder. Then add the washed and finely chopped herbs and then chill in the fridge.
Once the marinade has cooled, the belly meat is marinated in it for about 24 hours. Then dab with kitchen paper, coat in breadcrumbs and fry in the lard until nice and crispy. The herb bacon tastes particularly delicious with boiled potatoes or mashed potatoes and a delicious coleslaw! You absolutely have to try this!
