Frankfurter Kranz

The Frankfurter Kranz is one of the most popular cake creations in the region. However, preparing this calorie bomb takes some time and patience. Should you be able to muster both, coupled with a mighty appetite, all you need now are the following ingredients:

Ingredients

- For the dough:

- 185 - 200 grams of butter

- 185 - 200 grams of sugar

- 5 eggs

- 1 packet vanilla sugar

.

- 1/5 packet baking powder

- 150 grams flour

- 100 grams cornflour

- 1 lemon zest

- For the cream:

- 1/5 litre milk

.- 80 grams of sugar

- 1 packet of vanilla custard powder

- 200 grams of butter

- 100 grams of cornstarch

- 1 lemon zest

- For the topping:

- 1 jar of redcurrant jelly

- 150 grams of chopped almonds or brittle

- 10 - 15 cocktail cherries

Preparation:

First, mix the dough. To do this, put the butter and sugar together with the grated lemon zest in a bowl and mix until fluffy. Then add the eggs, then the flour and cornflour, and finally the rest of the ingredients and mix together to form a batter. Now put this batter into a greased ring pan and let it bake at about 180 degrees for 40 - 50 minutes (on the bottom rack). When the dough is done baking, turn out the form and let the finished cake cool (preferably overnight).

Now you have to make the crème next. To do this, boil the milk, custard powder and sugar to make a custard, which you also need to let cool. To prevent a skin from forming on the pudding while it is cooling, you should stir it regularly. Now cream the butter and then mix it into the cooled pudding. Now it gets a bit complicated: the cake crust has to be cut crosswise twice. To achieve straight cuts, you can use e.g. a thread for cutting. When you have succeeded in cutting three rings out of the wreath, first put a few drops of rum on two of the three rings, then spread the rings first with jelly, then with a total of 1/3 of the cream. Now put the wreath back together and gently press it down. Now brush the outside of the cake with the rest of the cream (keep a little for garnishing) and then sprinkle with almonds or brittle. Finally, use a piping bag to pipe small dots of crème onto the wreath and place the cocktail cherries on top. And ready is a very special delicacy that you should let melt in your mouth. Enjoy it!!!!
