Frankfurter Pudding - Variation 1

There are several variations of Frankfurter Pudding and, as is often the case, it is difficult to pinpoint the one true variation. Here now the first, very delicious variant. For this you need the following ingredients:

- 250 grams of hard brown bread

- 100 grams of sugar

- 1 pinch of salt

- 75 grams of butter

- 6 eggs

- 1 pinch of cinnamon

- 80 grams of almonds (grated)

- 2 apples (optionally apricots or peaches)

- 4 cl red wine

Preparation:

First you need to crumble the brown bread, which should preferably be a few days old (hard), into small crumbs and pour over the red wine. Now mix the butter with the sugar and stir the whole thing until it becomes foamy. Now add a pinch of salt and cinnamon. Now separate the egg whites from the egg yolks and gradually mix the yolks into the butter and sugar mixture. Then add the almonds, brown bread and the apples cut into small cubes (and peeled). Now just beat the egg whites until stiff and stir them into the whole mixture.

Now you need a pudding mould, grease it with butter, pour in the pudding mixture and then seal it tightly. Now put the mold in a pot of boiling water and cook for about 40 minutes. Now you need to carefully remove the mold and invert the pudding onto a large plate or platter. You can now serve the pudding either with red wine sauce or with apple cider mousse.
