Pfeifenmännchen (also known as Stutenkerl or Weckmann)

If there's one thing you definitely can't do without during the Christmas season, it's the popular Pfeifenmann, also known as Stutenkerl or Weckmann in some regions. Originally the pipe man represented a bishop, the eponymous pipe is actually just an inverted crozier. The pipe man gets his different names in different regions because of his shape or his dough. Thus he is also known as Hefekerl, Printenmann, Piepenkerl or Weggmann, among others. If you want to bake a pipe man yourself, you will need the following ingredients:

- For the dough:

- 350 grams of wheat flour

- 150 grams of low-fat curd or creme fraiche

<pp>- 1 packet vanilla sugar

- 100 ml milk

- 1 packet baking powder

- 30 grams of yeast

- 1 lemon (grated lemon zest)

- 1 pinch of salt

- 75 grams of sugar

- 75 - 100 grams of butter or margarine

- For the garnish:

- 1 egg yolk

- 1 tablespoon milk

- Almonds

- Raisins

- Hail sugar

- Hazelnuts

Preparation:

Which wants to be a real pipe man, needs a little preparation time. First, you need to prepare the batter. To do this, first heat the milk together with the butter (or margarine) in a pot. Now, while these ingredients are heating, mix the flour with the yeast. Now add the remaining ingredients, including the warmed milk/butter (margarine) to the mixing bowl and use a mixer to work the whole thing into a dough. As soon as the dough separates from the bowl (after about 5 minutes), let it rise in a warm place (e.g. on the windowsill above the radiator) for about 15 minutes. Now sprinkle a smooth surface with a little flour and roll out the dough. Before you do this, you should knead it again briefly with your hands. After rolling out, the dough should be about 1 cm high. Now you can cut out the pipe men in their typical shape with a knife and put them on a baking tray lined with baking paper.

Now mix the egg yolk with a tablespoon of milk and brush with it their cut out pipe men. Now you can decorate the delicious guys with the rest of the ingredients as you like. When you have given free rein to your creative side, put the whole thing into your preheated oven and let the delicacies bake for about 20 - 25 minutes at approx. 200 degrees. If you have a convection oven, 175 - 180 degrees will do.
