Speculoos

They are one of the most popular Christmas cookies of all, the crunchy speculoos. But they are also one of those cookies that you rarely bake yourself, since there is such a wide selection of packaged speculoos on the supermarket shelves, and they taste extremely delicious too. But still, nothing beats homemade speculoos. For this, however, you will need a special wooden model mould. In addition, you will need:

Ingredients

- 250 g flour (preferably wheat flour)

.- 1 tsp baking powder

- 1 egg

- 2 tsp vanilla sugar (about half a packet)

- 50 - 60 g ground, flaked almonds

- 150 g margarine

- 125 g sugar

- 1/4 tbsp grated lemon zest

- 1 pinch cardamom

- 1 pinch ground cloves

Preparation:

Whip the margarine, sugar and egg with a hand mixer until fluffy, then add the vanilla sugar, cardamom, clove powder and grated lemon zest and stir in the flour mixed with the baking powder. Now place the dough, covered, in the fridge for some time (2-4 hours). Now roll out the dough thinly on a floured work surface. Then place the speculoos models, also sprinkled with flour, on the dough, press them down and cut the dough around the shape. Then carefully loosen the dough from the wooden models and place the resulting speculoos on a baking tray lined with baking paper.

Now preheat your oven to about 200 degrees and then bake the speculoos for about 10 - 15 minutes. After that just let them cool down and Christmas can come! Let it taste!
