Nile Goose in Hessian - A Culinary Solution to the Problem

In Frankfurt, the Nile Goose has been causing a lot of trouble for some time. Even if the Nature and Biodiversity Conservation Union (NABU) considers it unproven that the non-native bird species causes ecological damage, there have been problems with the Egyptian goose in the Brentanobad or in Frankfurt's Ostpark, for example, which were supposed to be solved by shooting it down or installing a privacy hedge. With which success, remains to be seen. Now HOLYCRAB! is trying a completely new way of dealing with the Egyptian goose. Because HOLYCRAB! transforms invasive species like the goose into delicacies and turns the problem into a potential. This concept was awarded the Culture and Creative Pilots Prize by the German government and also won the Gastrogründer Prize. The initiators want to get sustainability out of the renunciation corner and want to make it possible for as many people as possible to grasp the topic positively and really join in.

It all started in Berlin, now the startup is also coming to Frankfurt on 27.3.2020 at 7 pm with a pop-up dinner.

Nilgans on Grüße sauce herb foam and egg yolk crumble forms the centerpiece of a 4-course menu, in which there will also be small portions of nutria and raccoon to try. You can find the full menu on the food startup's website: www.holycrab.berlin. The event takes place in cooperation with the cult pub "Club Michel" in Frankfurt's Bahnhofsviertel.

And that's what's behind HOLYCRAB's award-winning idea! Invasive species are a worldwide problem with many billions in economic damages e.g. in agriculture or in the real estate industry. Furthermore, invasive species are one of the 5 significant factors for a rapidly decreasing biodiversity on our planet. HOLYCRAB! enables its customers to link their contribution to nature conservation with healthy nutrition, because: many invasive species are highly valued delicacies where they come from. And: ingredients from regional hunting or wild catch are probably among the highest quality foods available to us, both in terms of animal welfare and quality.

While everyone is talking about meat alternatives and vegan diets for the sake of climate protection, HOLYCRAB! also offers a sustainable and healthy meat alternative: meat. Depending on the calculation, factory farming is responsible for up to 30% of global greenhouse gas emissions (through production and logistics). Exotic wild animal species such as nutria, Nile goose or Chinese mitten crabs from regional sources meet high quality standards as food. For a balance in the ecosystem it is necessary to manage these species appropriately. Humans are absolutely necessary as part of the food chain if we want to avoid food waste at this point. By turning the problem of "invasive species" into a potential - the future of food - the result is an innovation that challenges prevailing opinions about sustainability and provides customers with a variety of new products. "Why do we have to ship exotic ingredients halfway around the world when they live right on our doorstep?" asked the three founders, Jule and Lukas Bosch and Andreas Michelus. Their own motto, however, is: "Eat what's there!". The three founders and their team have already received several awards for their concept: as cultural and creative pilots, with the German Gastrogründerpreis, and just recently as Newcomer of the Year at the world-renowned gourmet festival eat! berlin.
